Brief Introduction:
Flour food (specially referring to the category of noodles), spread everywhere in China, there have been famous produc- tions, like Sichuan noodles with peppery sauce, Xi'an cold steamed noodles, and Southern plain noodles. But the category of flour food is abundant and the most producing exquisite should be Shanxi. Taiyuan as the cultural center of Shanxi is even the flour food centralized and absolutely brilliant place. Now, Taiyuan flour food is not only famous in domestic and floating reputation in the whole world, the birthplace of flour food culture is the Yellow River Basin, including Shanxi Taihang Mountain area and the central plains region in the West Bank of the Yellow River, which is not only the northern rural cultural cradle, but also one of the world's largest agricultural origin centers. In the Neolithic cultural relics of this region unearthed a large number of agricultural production tools,in which there were the food processing mills- tone and stone club. And the flour food processing prerequ- isite is just dependent on the flour processing.
